Watermelon Cake: A Refreshingly Sweet & Surprising Swiss Roll Recipe

Looking for a unique and show-stopping dessert? Look no further than Hankerie’s “Cakemelon” Swiss Roll, a delightful cake inspired by the vibrant sweetness of watermelons. This isn’t your ordinary swiss roll – it’s a culinary masterpiece that will tantalize your taste buds and amaze your guests.

Inspired by Exceptional Sweetness:

The idea for this award-winning recipe (1st runner-up, ASEAN Food Channel Cooking Competition) came from a simple trip to the supermarket. Hankerie discovered watermelons with exceptional sweetness, unlike the typical red-fleshed varieties commonly found in Malaysia. This sparked the desire to create a dessert that captured the essence of this refreshing fruit.

A Feast for the Senses:

The “Cakemelon” is a dessert that challenges your expectations. It looks like a juicy watermelon slice, complete with a dark green rind and black “seeds,” but the first bite reveals a light, fluffy cake with a delightful sweetness. This playful contrast between what you see and what you taste is what makes this dessert truly special.

Creative Swissroll

Unique Filling and Playful Details:

Instead of traditional jam, the “Cakemelon” features a vibrant raspberry and whipped cream filling, mimicking the pinkish-white layer found under a watermelon’s rind. The “seeds” are a delightful surprise, adding a touch of whimsy to the presentation.

Coffee Art Meets Baking:

To achieve the realistic watermelon rind, Hankerie employs a coffee latte art technique. Lines are drawn on the surface of the swiss roll batter, creating a visually stunning effect. This innovative approach, combined with the use of two colored batters, results in a beautifully crafted dessert that’s sure to impress.

More Than Just a Dessert:

The “Cakemelon” Swiss Roll is a testament to creativity in baking. It’s guaranteed to surprise and delight your guests, making it a perfect centerpiece for any special occasion. So, ditch the ordinary and impress everyone with this unique and award-winning dessert!

  • Bake for 10-12 minutes until golden brown and springy to touch.
  • While baking, prepare a cooling tray with sugared greaseproof paper.
  • Once baked, immediately invert the sponge onto the sugared paper, remove the tin, and carefully peel off the baking paper.
  • Trim any crusty edges, spread whipped cream evenly over the sponge, and roll it up. Let it rest in the paper for a few minutes before serving.

Notes

  • Coloring the Batter: Divide the batter into two bowls and add red and green food coloring separately. Pour each colored mixture carefully into the Swiss roll tin, ensuring to draw a green line on the green batter to mimic the watermelon skin effect.
  • Decorating Tips: Use a coffee latte art method to draw lines on the batter to create the watermelon skin effect. This adds a realistic touch to the appearance of the swiss roll.
  • Cooling and Rolling: As soon as the sponge is baked, invert it onto sugared greaseproof paper and carefully peel off the baking paper. Trim any hard crusty edges, then spread whipped cream evenly over the sponge before rolling it up. Allowing it to cool in the rolled position helps it retain its shape.
  • Filling Variations: Instead of whipped cream with raspberries, you can experiment with other fillings like vanilla cream, chocolate ganache, or even a fruit compote for added flavor and texture.
