35g Caster sugar
100ml Fresh cream
10g Lemon juice

- Light Matcha Filling (Top Layer):
100g Cream cheese
5g Matcha powder
25g Caster sugar
100ml Fresh cream
50g Plain Greek yogurt
3g Gelatin sheets (or powder)
- Decorations:

Directions
- Prepare the Biscuit Base:
- Melt the butter in the pot or microwave. Crush the digestive biscuits in a zip lock bag and use rolling pint to crush it. until fine crumbs form. Combine the biscuits in zip lock bag with the melted butter, mix well, and press evenly into the bottom of your cake mould (8inch wide). Refrigerate to set.
- Rich Matcha Filling (Bottom Layer):
- Soften the gelatin sheets by soaking them in ice water for 5 minutes.
- Heat the cream in a pot until it reaches 50-60°C. Stir the softened gelatin into the warm cream until fully dissolved.
- In a separate bowl, beat the softened cream cheese until smooth. Add the sifted matcha powder and caster sugar, mixing until the cheese is creamy and lump-free.
- Stir in the warm cream mixture and lemon juice, combining well.
- Pour this rich matcha mixture over the chilled biscuit base and refrigerate for about 1 hour until set.
- Light Matcha Filling (Top Layer):
- Repeat the gelatin softening process, soaking it in ice water for 5 minutes.
- Heat the cream as before and dissolve the softened gelatin.
- In another bowl, whisk together the cream cheese, sifted matcha powder, and sugar until smooth. Add the Greek yogurt, dissolved gelatin-cream mixture, and mix until fully incorporated.
- Pour this light matcha mixture over the set bottom layer. Refrigerate for 1-2 hours or overnight until completely firm.
- Unmould, decorate and Serve:
- To easily release the cake, wrap a warm towel around the mould for a few seconds. Enjoy your layered matcha cheesecake!
