Nearly a decade later, in 2017, I had the joy of revisiting New Plymouth, reuniting with my dear friend and her husband, reminiscing about old times, and sharing stories over great food. Inspired by this beloved recipe, I have since improvised it into a modern version using an air fryer—keeping the essence of the dish while adapting it for a quicker, crispier experience.

With its stunning beaches, scenic trails, and welcoming community, it felt like home from the moment I arrived. The town’s serene beauty, with rolling green hills meeting the ocean, was an inspiring backdrop for my time there.

Working at Shell New Plymouth was an unforgettable chapter of my life. It was a period of growth, adventure, and deep friendships, one of which blossomed over shared meals and lively kitchen conversations. My best friend, a true home cook, introduced me to many delicious home-style recipes, including her family’s quiche—a dish that quickly became a favorite of mine.

I still remember how she would bake golden, fluffy quiches in her oven, filling the house with an irresistible aroma. We would gather around her cozy dining table, chatting for hours about life, work, and our dreams. The quiche was always the centerpiece of these conversations—a simple yet comforting dish that brought people together.


The Evolution of a Classic: From Oven to Air Fryer

When I moved away, I carried with me not just the fond memories but also my best friend’s quiche recipe. Over the years, as my own cooking techniques evolved, I found myself experimenting with new ways to prepare this dish.

The result? A delightfully flaky and cheesy quiche, packed with flavor and nostalgia, yet incredibly easy to prepare. Below, I’ll share with you my improvised version, which retains the soul of the original recipe while making it even more accessible for busy home cooks.

Ingredients

  • 4 ready-made vol-au-vent pastry cases

  • 2 eggs

  • Less than ½ cup self-raising flour

  • 2 teaspoons olive oil

  • ⅔ cup milk

  • ½ cup grated cheddar & mozzarella cheese

  • ¼ cup frozen green peas

  • 3 rashers bacon – diced and precooked

  • ½ onion – diced and cooked in bacon oil

  • Pink salt and pepper to taste

  • (Optional: Fresh coriander leaves and cherry tomatoes for garnish)

Directions

  • Precook the Bacon & Onion
  • In a frying pan over medium heat, cook the diced bacon until crispy.
  • Remove the bacon and set aside, leaving the rendered bacon oil in the pan.
  • Using the bacon oil, sauté the diced onion until soft and fragrant. Set aside to cool.
  • Mix the Quiche Batter
  • In a bowl, whisk together eggs and milk.
  • Gradually add self-raising flour, stirring until smooth.
  • Fold in the cooked bacon and onion.
  • Season with pink salt and pepper to taste.
  • Add in olive oil and green peas, mixing everything together evenly.
  • Assemble the Vol-au-Vents
  • Preheat the air fryer to 180°C (356°F) for 1 minute.
  • Place vol-au-vent pastry cases in the air fryer basket.
  • Using a sharp-tipped measuring cup, spoon the quiche mixture into each case, filling them almost to the top but not completely full.

  • Air Fry to Perfection
  • Air fry at 180°C (356°F) for 12–15 minutes, or until the filling is set and golden brown.
  • To check doneness, press lightly on the filling—if it springs back, it’s ready!

  • Let the quiches cool slightly before serving.

Revisiting New Plymouth in 2017: A Journey Back in Time

Nearly a decade later, in 2017, I had the incredible opportunity to return to New Plymouth to visit my best friend and her husband. Stepping back into the familiar town was like rewinding time, as memories of my year there came flooding back.
